This recipe is for you if you love a good sweet treat that comes together in just 30 minutes. This oatmeal peanut butter chocolate chip cookie skillet is indulgent, nutty, and gooey in the center. Enjoy straight from the skillet with a spoon or serve on a plate with a scoop of ice cream!!

Ingredients

  • Rolled oats
  • Light brown sugar
  • All-purpose flour
  • Creamy peanut butter
  • Eggs
  • Extra virgin olive oil
  • Baking soda
  • Flaky sea salt
  • Dark chocolate chips
  • Vanilla extract

How to Make It

Preheat the oven to 350° F. Combine the rolled oats, all-purpose flour, salt, and baking soda in a large mixing bowl.

In a separate mixing bowl, whisk the eggs. Then add the peanut butter, olive oil, vanilla extract, and brown sugar. Mix until well combined.

Add the wet mixture to the dry ingredients, then stir well with a spatula until everything is well combined.

Mix in the chocolate chips, then add to an 8-inch cast-iron skillet lined with parchment paper. If making without parchment paper, make sure the cast-iron is well greased.

Place in the oven and bake for 25-27 minutes. Press a toothpick down the center, and if it comes out clean, it is ready 🙂

Serve warm and enjoy!!! This would go great with vanilla ice cream for a more indulgent twist.

Dry

  • 1 cup rolled oats
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • small pinch of salt
  • 3/4 cup dark chocolate chips

Wet

  • 2 eggs
  • 1/3 cup extra virgin olive oil
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2/3 cup creamy peanut butter

Equipment

  • 8-inch cast iron skillet

Instructions
 

  • Preheat the oven to 350° F.
  • In a large mixing bowl, combine the dry ingredients. Whisk and set aside.
  • In a separate bowl, whisk the eggs. Add the olive oil, peanut butter vanilla extract, and brown sugar. Mix until smooth.
  • Add the wet ingredients to the dry ingredients, then mix until well combined. Fold in the chocolate chips.
  • Add the batter to a lined cast-iron and gently press and spread with a spatula or your hands. If desired, sprinkle extra chocolate chips on top!
  • Place in the oven for 25-27 minutes. The top and edges should be slightly golden. Serve with flaky sea salt and/or a scoop of vanilla ice cream. Dig in and enjoy!
