They’re warm, fluffy, and naturally sweetened with banana, then studded with juicy blueberries. I threw this one together when I was feeling nostalgic about my baked oatmeal breakfasts in college, but wanted to give it a little protein boost.

Growing up, most oatmeal recipes I ate were pretty low in protein. I love this breakfast because it makes for a nice change from my usual eggs and avocado toast while still meeting my protein needs. The protein comes from Greek yogurt, which also gives the oats a fluffy and moist texture!

How to Make Banana Blueberry Baked Oats

Preheat oven to 350° F.

Mash & mix – In a small bowl, mash the banana. Add milk, almond butter, and Greek yogurt. Stir until smooth.

Add dry ingredients – Mix in oats, baking powder, cinnamon, and salt until combined.

Bake it – Transfer mixture to a greased small baking dish. Top with blueberries, gently pressing them in.

Baking Tip: For best results, use a 5 1/2-6″ oven-friendly ramekin or baking dish.

Bake for 17-19 minutes, until golden and set. Serve with a drizzle of maple syrup and add any extra toppings you love.

Ingredients
 

  • 1 ripe banana
  • 1/4 cup milk, I used oat milk, but any milk works!
  • 2 tablespoons creamy almond butter
  • 2 1/2 tablespoons plain Greek yogurt, non-fat
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • fresh blueberries, for topping
  • small pinch of salt

Instructions
 

  • Preheat the oven to 350° F.
  • Mash the banana in a bowl. Then add the milk, almond butter and Greek yogurt. Mix until well combined.
  • Add the oats, baking powder, cinnamon, and salt and mix until well combined.
  • Add this mixture to a small, greased oven-friendly ramekin and top with the blueberries. Gently press them into the mixture, then bake for 17-19 minutes.
  • Serve with maple syrup and other desired toppings. Enjoy!
